
Introduction
Students gathered outside the Health and Life Sciences Building for a special event aimed at promoting healthy living. Organized by the Office of Student Engagement in collaboration with the Health and Wellness Center and Hungry Harvest, the event offered a variety of fresh fruits, vegetables, and cookbooks.
What Was Offered?
Participants had the opportunity to take home apples, pears, eggplant, snow peas, butter lettuce, leeks, watermelon juice, and cucumber water. The event was designed to encourage healthy eating habits among students.
Why This Event?
“[It’s] a way to promote good, healthy living on campus,” explained Bethany Tatro, the event coordinator. “People can just come and get fruits, vegetables that they like.”
Monthly Themes
The Wellness Wednesday event is held monthly, each time with a different focus. Upcoming themes include sleep on Oct. 2, movement on Nov. 6, and stress relief on Dec. 4.
Student Experiences
First-year American Sign Language student Eva Williams mentioned, “I saw on Instagram a potato leek soup. I might do that. It’s soup season and I love soup.” Meanwhile, second-year nursing student Elizabeth Eckert shared her plans: “I love grilling eggplant and roasting it with a ton of olive oil and salt and [with the] butter lettuce, just maybe some salads with avocado and vinaigrette.”
